That’s why we are constantly looking for fresh ingredients that are of the highest quality. When we can, we believe that locally sourcing our ingredients is the best practice. We keep an organic country garden on Lai-yi mountain in Pingtung county where we grow most of the fresh vegetables that we use. If we can’t grow it ourselves, we source it from local farmers and organic markets to ensure that we know exactly where our produce is coming from.

As for our meat, when we can source it locally we do. If we have to import it, we ensure that it is of the highest quality from reputable sources. The pork we use comes from our local market ‘auntie’ and is raised on farms in Kaohsiung or Pingtung. We only use quality free-range chickens that have never seen a cage in their life. Finally, our beef is sourced from reputable New Zealand producers.

Let’s talk about pizza.

As we learned from our friends at ‘Academia Pizzaioli,’ the number one pizza school in Italy, we exclusively use is ‘Caputo 00’ flour imported from Italy in our dough. It is then hand-made and then matured for 24 hours, before being hand stretched to order.

We also carry Val-Dieu, a Belgian artisanal beer that is still made to this day in an abbey, by the monks that live there, just as it has been for the last 800 years. We also have a selection of premium spirits if you feel like a cocktail.
